Peanut Butter Oatmeal Chocolate Chip Cookies

Peanut butter, oats, AND chocolate chips in one cookie? Sounds good to me!

I haven't made something in a while, so I made these in my break between classes!
I think they are already half gone.. so I guess that's all I have to say!

Brownie Cupcakes (mini mini)

As I mentioned before, my mom and brother came to visit me. I asked my mom to bring me the mini muffin pans from home (I am slowly stealing the entire kitchen) so that I could make something mini! I decided to make a simple chocolate cake with my favorite vanilla frosting. I ended up stumbling upon this chocolate brownie cupcake and decided to give it a try. The mini muffin pans ended up being even too mini for the mini muffin liners that I bought (How many times can I say mini?). So the first batch I tried to make with just cooking spray, and it was kind of a struggle to get them out in just one piece. For the second batch, I used the liners I bought, so the cupcakes were a bit bigger.


Just for comparisons, here is a regular liner, the mini liner, and the brownie from the mini pan.


It is definitely a brownie cupcake and not a regular cupcake. The frosting is the same frosting I used when I made the cookie-bottomed cakes! I added a big dollop onto each one! yumyum

Oreo Cheesecake Cupcakes

I was thinking of what to make when my brother and mom came to visit me.. but luckily my brother and his girlfriend requested these cheesecake cupcakes. So I made them the day before I left for a weekend in Vegas and refrigerated them while I was gone. I have never made a cheesecake before, so I was wondering whether it would turn out, but it did! I didn't get to eat very many because I sent so many home with my family for others to enjoy. Definitely not my prettiest baking adventures, but it was tasty, so it doesn't really matter right?

I made a couple jumbo cupcakes and here you can see the entire oreo crust on the bottom :]

Caramel Cupcakes

With the rest of my buttermilk, I decided to make these caramel cupcakes. I LOVE caramel so this was sitting in my must be made folder, also. The cakes were a light vanilla buttermilk cake that was so simple and delicious.
I had to leave the cakes to be completely cool before I could put the caramel on (which was a bit more patience than I could handle).
Once they were cooled I went ahead and made the caramel! 
 sorry about these next two blurry pictures, I attempted to take a picture of me dipping the cupcakes so you can see how it worked!

 Once the caramel dried, it formed a hard shell on the cupcakes, which was very different than my normal frosting.

I thought they turned out great! I brought some along to my friend Lauren's house and gave some to her family. 

Buttermilk Donuts

I had a carton of buttermilk sitting in my fridge that was about to expire, so I decided I need to use it fast! This recipe has been sitting in my "must make" bookmark, so this was the perfect time. I liked the donut holes a bit more because they were easier to grab on my way out the door, but they were all delicious! I split the dough in half, and made cinnamon sugar donuts the first day, then the next day I made a vanilla glaze.

Lemon White Chocolate Cream Cheese Frosting

That sounds like a whole lot of flavors, but they blend together amazingly. The lemon created a "WEEEEE" flavor in your mouth, according to Kelly Kusumi, or as Natalie Ziegler said- swangy (tangy and sweet). I wish the white chocolate could be tasted a bit more, but it really created a light, fresh frosting, which was perfect for my delicate vanilla cakes :]



Zak, one of my housemates wanted to use my piping bag and frost a cupcake, which turned out just lovely!

I used my new pearl sprinkles to make them look prettier :] So since this made manyyy more cupcakes than are acceptable for me to eat, please come by and take one!

Guest Post: Leigh Mitnick!

Yesterday, my awesome roommate Leigh made an amazing dinner that I got to eat :] She made chicken piccata, green beans, and potatoes! It looked and tasted so good that I thought it deserved a guest post on this blog. Enjoy!

Vanilla Bean Cupcakes

I'm obsessed. I think I say this about everything that I bake, but this one really takes the [cup]cake. My birthday is tomorrow, so in celebration I decided to use my precious vanilla bean, with my pink birthday crown cupcakes liners (thanks mom)!

I had bought a vanilla bean a while ago, but because they are a bit expensive, I had to find just the right recipe to use it with. I saw these cupcakes and knew that this was it. I lovee a simple delicious vanilla flavor and a simple cupcake means I can go crazy on the frosting. While I was making the batter, I just knew it was going to be amazing. It was so creamy it was hard to not just eat all of the batter, and you can even see the small vanilla bean specks. yummmmmm. I had read that not only the beans have flavor, but the shell too, so I stuck the leftover shell into a bag of sugar to make vanilla sugar. I'll have to find a recipe that uses that!


I think whoever created this recipe must have meant 36 when they said this recipe yielded 24 cupcakes because that's how many came out. A couple more than I really need in my household, so please come eat some! It is getting late and the cupcakes need to cool before I can frost them, but I could not wait to show these off! Keep looking for an update with the frosting!

Peach Crumble Bars

And when I say crumble.. I mean crumble. It's a bit hard to eat as a whole bar, but they are sugary and delicious! I definitely recommend if you have extra peaches around, or really any fruit! I don't see how adding oats, sugar, and butter to anything could turn out badly.
