Strawberry Lemonade Cupcakes

Taking a break from the heavy, chocolate filled treats that we normally make...






comes strawberry lemonade cupcakes! I've been keeping this on my list of things to make and one day I decided to finally take a crack at it. I wanted them to be very light because I already knew what frosting I wanted to use with it, so I needed to find the perfect lemon cake. I found one that was supposed to create a sponge cake texture and after I made those I began to make my favorite frosting!

It's a straight whipped cream with completely fresh strawberry puree mixed right in. My roommates and I saved all of the extra and ate it straight... no regrets.


It matches perfectly with the light cake. Refreshing!







Strawberry Whipped Cream Frosting:

1 cup of heavy whipped cream
1/3 cup of sugar
Strawberries!

1. Whip cream with beaters/ stand mixer until thick
2. Mix in sugar
3. Fold in pureed strawberries. I used an entire package of strawberries but it really is up to you and how much taste you want!

Make sure you have good tasters :] I don't think you will have any problems getting people to taste test.

Sugar Cookies

So before I ate the rest of the strawberry frosting, I decided to make another vehicle for them, so I made a basic sugar cookie so that I could frost them. I realized after I made all the dough that I did not have a rolling pin.

I tried to roll it out with my hands.. but it clearly did not work that well.
So we ended up scraping the dough off of the counter and just rolling it into shapes, most of which were just circles (creative, I know).


The next morning, there were only like five left. Once again, a good sign.

Strawberry and Champagne Cupcakes

So, with lots of time on my hands, I was thinking of things to make for some of my friends! A bunch of my friends were moving into their new houses a week after I had moved in, so I decided to bake them a housewarming treat! I had seen this recipe for champagne cupcakes, which I thought could be delicious! It had a champange buttercream, but while I've been baking I have discovered that I'm not a huge fan of buttercreams. They're a bit too rich for me so I didn't want to use the frosting in this recipe. I thought it would be cute to do a strawberry frosting, so I went on a search for a good strawberry frosting. I found one that was a whipped cream, which I thought I would try. I have to say, it was AMAZING. I ended up saving the rest, freezing it and eating it like ice cream. whoops?

I wanted to make them extra cute (why not?) so I added a strawberry slice to the top. Definitely my prettiest cupcakes to date!

Lemon Strawberry Scones

One of my favorite foods are scones! They are soo underrated and people always hate on them, but what's wrong with a dense muffin? Especially full of lemonness and strawberries?

Mango and Strawberry Popsicles!

I saw these popsicle molds at a store and had to buy them! I always buy too much fruit and have to throw it away, so I thought this would be the perfect way to use them in the summer :] I used what we had in the kitchen, which was Mangoes and strawberries. I didn't use a recipe for these and just pureed the mangoes and strawberries and added sugar until they tasted right!
