Sooo... I'm back? With Snickerdoodle Cookie Cupcakes

Hey again! After months of computer memory problems and limitless procrastination.. the blog is back in action!






I'll be randomly updating for all of the things that we have made during the past couple of months as well as trying to blog the real time current endeavors!






So back in December, I made these delicious snickerdoodle cupcakes! They had a crunchy cookie in the bottom which made them that much better (and made them take double the time to make).


One of the worst parts about making cupcakes is the waiting time between baking them and being able to frost them...
and because I took so much time on the cookie dough and cupcake dough... I didn't want to wait.
so I popped some in the fridge!


They turned out pretty delicious if I say so myself :]

Cinnamon Roll Cupcakes

Whenever we're bored.. the first question is always "What should we make?" Then, we decide who has the ingredients needed and we get to work! So, clearly, the other day we were quite bored and decided to make these cinnamon roll cupcakes. They were really fun to make and had a glaze and a frosting! We made the batter and then you alternate putting a dollop of batter and covering it with the cinnamon/ butter/ sugar mixture and swirling together!

then we baked them.. and they came out all crackly and delicious with baked sugar (which is always great). It was hard not to eat them while they cooled..


and when they were finally cool enough we put a coffee glaze on top..

and finally finished them off with a cream cheese frosting!



It really did taste like a cinnamon roll, they were so good! We topped half with the coffee/ sugar/ chocolate grinder (which I really feel like would go with about anything), and half with cinnamon. Yum! (obviously, these were gone by the morning)

Monkey Bread Muffins

This summer is becoming less of the lay around and do literally nothing type of summer and has slowly transitioned into waking up at 6:30 every morning and being in bed by 9. Fun, right? After taking my obligatory nap after work, I tried to convince myself that my house didn't need any more baked goods as the chocolate chip cookies were still around, but I failed in that. After seeing that I had all the ingredients, and it looked easy enough, this monkey bread recipe had to be made. It turned out to be a bit messier than I had anticipated...

and I had to improvise a bit but they turned out good enough! Delicious, actually...

Cinnamon Pinwheels

Since baking has become a normal occurence in our apartment, one day when Leigh and I had nothing to do (like normal) we decided to whip up something easy! We found a recipe for cinnamon pinwheel muffins that used Bisquick, which is something easily on hand. Within 10 minutes (and without a rolling pin once again) we had them in the oven. They made the house smell AMAZING and were super easy. We improvised on the icing and it turned out great! When I came home the next day, they were all gone. At least I got two of them?

Snickerdoodles

After a couple weeks at home for summer, I finally got to move into my new apartment in Isla Vista!
I am in lovee with my view (yes, I made it into my banner)! Waking up to the ocean waves and this view is prettyyyy rough. So I had to christen my new kitchen (complete with the kitchen aid taken from my house, sorry Mom!) with something delicious! I had my friend Lauren over for about a week because she was homeless, so we decided to make snickerdoodles!
and because she is a loser (jk) we made a nice fleur de lis cookie to represent some kappa, which sort of turned out? But they honestly were really good and light! A good first baking experience on Del Playa :]

Cinnamon Pull-Apart Bread

I have never made bread before so why not try a dessertish one? It was one of my first encounters baking with yeast, so I'm surprised it turned out. I only burnt it a little bit but it was still good! My mom ended up making french toast with it after a couple of days and it was obviously amazing :]

Cinnamon Bun Shortbread Cookies


Continuing my memorial day weekend baking frenzy, I made these cinnamon cookies and brought some back to Kappa with me. Probably one of my favorite recipes!
